Yesterday I was stuck for ideas when it came to having my lunch, so I decided to see what I had hiding in my cupboards and fridge. Interestingly enough I cam across some new potatoes that I had purchase for just 3p when being reduced a few weeks back. They had started sprouting but still perfect when cooked.
So to reduce my food waste and save money I decided to make a light potato salad. Along with some tomatoes, carrot, lettuce, chickpeas and cheese, I certainly had enough to make a tasty and healthy lunch.
As it turned out is was delicious and it kept me full till late in the day. New underestimate the power of the spud!!
Anyway, I thought I would share my recipe for this dish and hope you all have a go plus, feel free to try any variations
and share them with me! Love to hear how your versions turn out.
Potato salad recipe (serves 1)
- Hand full of new potatoes
- Hand full of cherry tomatoes
- 1 carrot grated
- 2 tbsp of pre cooked canned chickpeas
- cheddar cheese to taste
Dressing in a Jar.
- 1 tsp of dijon mustard
- 3 tbsp of olive oil
- 1 tbsp of white wine vinegar
Boil the potatoes for 30 minutes in lightly salted water. Once cooked rain and rest to cool. Then cut the potatoes in half and add to a mixing bowl. Finely chop the lettuce, half the tomatoes and add the chickpeas along with the carrot, lettuce and tomatoes. Mix well.
Add all of the dressing ingredients into a clean jar. Screw tightly shut and shake well until mixed. Add to the mixture along with some grated cheese (amount to taste, less is more in my eyes). Mix the dressing and cheese into the potato mix and serve. Add some dried parsley to finish is you so desire.
All of this for less than 50p a serving. Fantastic!!
